Pinoy Tuna Fish Steak

This is my version of Pinoy Tuna Fish Steak. I am so happy that it turned out to be a success!!


INGREDIENTS:
500g tuna, cleaned, sliced to fillet
1 onion (cut into rings)
olive oil   
1/4 cup soy sauce  
2 tbsp calamansi
1 tsp ground black pepper

Directions:

1. Clean and drain your tuna fillet. Pat dry with paper towels.
2. Mix soy sauce, calamansi juice and pepper.
3. Put in tuna fillet in mixture. Set aside mixture for about 30 minutes.
4. Heat 2 tablespoons olive oil in a pan and put in tuna fillet. Set aside the marinade.
5. Stir fry the tuna fillet in pan, tossing each one to cook both sides well. Do not overcook.
6. Remove the fillets using tong and set aside.
7. In the same pan, add 1 tablespoon of olive oil and cook onions until they become translucent.
8. Put in the remaining marinade and let boil. It is important to have it boiled because it was were raw fish was soaked in.
9. Pour your boiling sauce on top of the fish fillets you have set aside.

Pancit Canton

Pancit is a Filipino noodle dish that comes in a wide array of versions. It is a stir-fried dish composed of dried noodles, meat, poultry or seafood and vegetables. I used to be very intimidated with it as it looks to be very complicated to do until I had the chance to cook one and I must say it's quite easy.

 
Ingredients:
 
2 tbsp cooking oil
4 cloves garlic, minced
1 onion, chopped
1 cup chicken breast, thinly sliced
8-10 pcs med sized shrimps
1 cup chicken liver (optional)
1/2 cup kikiam
1/2 cup fish ball or squid ball
2 tablespoon soy sauce
1 teaspoon ground black pepper
1 chicken broth cube
1 tbsp oyster sauce
1 cup snow pea
1 medium carrots, julienned or circles
3 cups water
250 grams of dried canton noodles
1/2 cup celery, chopped finely
1 head medium cabbage, chopped
 
Directions:
 
In a pan, heat the oil then sauté the garlic and onion. Add the chicken breast, chicken liver, kikiam, shrimps and fish ball and cook until the outer part turns light brown. Add the soy sauce, pepper, chicken broth cube, oyster sauce and stir. Put in snow peas, carrots, beans and stir. Add water then bring to boil. Put in the dried canton noodles and cabbage and cook until the liquid has been absorbed by the noodles

Chewy Chocolate Chip Cookies

This is the second time that I baked these chewy cookies. I must say, they're the easiest to do. This recipe can make approximately 2 dozen medium sized cookies

 
 
Ingredients:
 
1 cup white sugar
1/3 cup brown sugar
1/2 teaspoon salt
2 eggs
1 cup of butter (room temperature)
2 1/4 cups of flour
1 teaspoon of baking soda
1 teaspoon of vanilla
2 tablespoons milk
Up to 2 cups of chocolate chips
 
Directions:
 
Preheat the oven to 350ºF/180ºC.In separate bowl, mix sugar, brown sugar and butter until well blended. Add eggs one at a time then pour in Vanilla. In another bowl mix in flour, salt and baking soda all together. Then slowly combine wet and dry ingredients. Mix until fully blended; add the milk to achieve a smoothly blended dough. After blending the mixture, add the chocolate chips. Apply cooking spray to the pan so that the cookies won't stick to the baking pan. Alternatively, line the pan with baking paper. Roll a small ball for each cookie or use an ice cream scoop to have equal sizes. Put cookies in the oven for about 8-10 minutes. Don't overdo the cooking, as they'll continue to cook after you remove them from the oven.Take the cookies out of the oven and let them sit on a wire cooling rack for about 15 minutes to cool. 

Chocolate-Chocolate Chip Muffins

I have thought of spending the day baking since I have the luxury of time. Here's my very own chocolate chip muffins. They're gooey on the inside.

 
 
Ingredients:

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder
3/4 cup superfine sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract
 
Directions:
 
Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl.
 
Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, a lumpy batter makes the best muffins.
 
Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark and has risen.

Honey Vanilla Pound Cake

I am fond of cooking shows and most of my TV time is spent watching it. One show that I frequently watch is Barefoot Contessa Back to Basics. Ina Garten really make things look easy to do. Here's one that I have attempted to bake based on her recipe. Luckily it turned out pretty well.

My version of Ina Garten's Honey Vanilla Pound Cake
 
Ingredients
  • 1/2 pound (2 sticks) unsalted butter, at cool room temperature
  • 1 1/4 cups sugar
  • 4 extra-large eggs, at room temperature
  • 2 tablespoons honey
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon grated lemon zest
  • 2 cups sifted cake flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking powder
Directions
Preheat the oven to 350 degrees. Grease the bottom of an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Line the bottom with parchment paper, then grease and flour the pan.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed for 3 to 4 minutes, until light. Meanwhile, put the eggs, honey, vanilla, and lemon zest in a glass measuring cup but do not combine. With the mixer on medium-low speed, add the egg mixture, one egg at a time, scraping down the bowl and allowing each egg to become incorporated before adding the next egg.

Sift together the flour, salt, and baking powder. With the mixer on low speed, add it slowly to the batter until just combined. Finish mixing the batter with a rubber spatula and pour it into the prepared pan. Smooth the top. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Cool for 15 minutes, turn out onto a baking rack, and cool completely.
